Life Through Food: Banana Bread

While I am not a fan of bananas, Banana Bread has always been a favorite! Whenever my family had leftover bananas, we used the over-ripe bananas to make a dense, delicious loaf.


  • 2 eggs
  • 2/3 cup granulated sugar
  • 1/2 cup margarine (if you use butter, skip salt)
  • 1 cup mashed bananas (2-3 really ripe)
  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • (optional) 1/2 cup chopped walnuts

Preheat the oven to 350 degrees Fahrenheit. Beat the eggs in a stand mixer, and add sugar. Melt the margarine and combine. In a separate bowl, sift flour, baking powder, baking soda, and salt. Mash bananas (either in stand mixer or a separate bowl with a potato masher) and mix into wet ingredients. Combine wet and dry ingredients in the stand mixer until batter is formed.

Once combined, grease loaf pans and pour batter to 1/3 line.

Place loafs on the middle rack and bake for one hour.
